Experimental Meatloaf

So, I took a about a cup of baby spinach leaves and 4 or 5 tablespoons of feta cheese, and used the blender to chop it into bits. I added about a half-cup of olive oil vinegrette. I took this mixture, 1.5 pounds of very lean ground beef, and a quarter cup of corn-meal and mixed it well, shaped it into a loaf, and stuck it in the oven at 350°. I’m going to leave it in there for about an hour and 15 minutes. I hope it turns out well.

Update the First: 8:35pm and I have a very odd looking green meatloaf cooking up in there…

Update the Second: Not bad. I let it cook a little too long, so it was a bit drier than it could have been.?? (It was in for an hour and a half instead, so it got a little dark, but luckily not burnt as I first feared.) The flavor was very very mild…perhaps a bolder combination for next time.

The Little Boy

Wheaten, my cat and the youngest (I think he just turned 4), just went tearing through and jumped over me in order to hassle the sleeping Sean. He made a big show of leaping on the bed *thud* but then gently put a paw on Sean, and trilled. I’m almost jealous, the little flirt.
