Meatloaf Cups
Continuing the idea of food made in cupcake tins, tonight I made little meatloaf cups. I took a pound of ground turkey, an egg, about 1/4 cup of ketchup, about 3/4 cup of Italian seasoned bread crumbs, some garlic powder, and a dash of pepper and mixed it up, and spooned it into the six muffin cups (nearly filling each). I put it in the toaster oven at 350 degrees for half an hour. Then I topped each with a swirl of ketchup and a little shredded sharp cheddar cheese, and put it back into the toaster oven for 5 minutes.
Separately I made some tater-rounds, and put three on each meat-muffin. They turned out very cute. Someone at Pennsic was talking about making meatloaf cupcakes for kids, so it was fun to try it out. (The toppings should be fun for kids to eat too — I saw some online with mashed potato frosting, but I didn’t feel like making mashed potatoes.)
